
Austrian Linzer Cookies – These cookies are named after the Linzer Torte, a pastry that has a dough lattice over a jam filling, that originated in the Austrian city of Linz. Austrian Linzer cookies, also known as Helle Linzer Plaetzchen in German—which translates to “bright Linzer cookies”—are two buttery shortbread cookies sandwiched together with a jam that peeks out through the cutout in the top half. These delicious soft almond cookies, are sandwiched with raspberry jam and sprinkled with powdered sugar on top! Festive, beautiful and so delicious 😋 Linzer cookies are my favorite holiday cookie besides the gingerbread. These cookies are super soft not too sweet and just melts in the mouth. A must-try recipe for the holidays!


The dough needs to be chilled for an hour or two. And the cookies do not spread while baking. You could use any jam of your choice. I’ve used raspberry jam. Apricot jam tastes very good too. Here you go with the recipe of these beautiful and delicious Linzers!

Ingredients:
All-purpose flour- 21/2 cups
Almond flour- 1 cup
Egg yolk – 2 numbers ( room temperature )
Softened Unsalted butter- 1 cup
Lemon juice-2 tbsp
Salt-1/4 tsp
Powdered Sugar- 1 cup
Vanilla extract- 2 tsp
Raspberry jam or any jam of your choice.
More powdered sugar for sprinkling
Method:
In a bowl of a stand mixer fitted with a paddle attachment or a hand mixer cream together the butter and powdered sugar until creamy for about 2 mins. Then add in the egg yolks one by one and mix until combined. then add in the vanilla extract, lemon juice, and salt and mix until fully incorporated. Stir in both the flours in batches until just combined. Wrap the dough in two half’s in plastic wrap and refrigerate until an hour or two.
Preheat oven to 350°F / 175°C. Line 2 or 3 baking sheets with parchment paper. Set aside.
On a lightly floured surface, roll out the dough in 1/4 inch thickness. Cut out the cookies using the Linzer cutters. Place them on the baking sheet one inch apart and bake them for 9-10 minutes till the cookie looks dry on top.
Once cooled completely sandwich them with the jam of your choice sprinkle the powdered sugar and enjoy!
