
That’s the Jalapeño Cornbread Waffles Rancheros – my go-to dinner for the summers! I’ve added pickled jalapeños slices, a delicious and fiery condiment from @rolandfoods to the batter to add that spicy kick to the waffles! @rolandfoods Jalapeno Slices are sliced and spicy peppers are the ideal addition to any dish in need of a kick of heat.

Not just a dinner this meal makes a delicious, and easy-to-prepare summer breakfast that comes together in very less time! I’ve served it with fried eggs, beans, and salsa. But you can also serve it with chili soup or maple syrup. Not just cornbread waffles, just slather a juicy hot dog with creamy guacamole and top with @rolandfoods Jalapeno Slices for a delicious Mexican-inspired meal. Enjoy!

Ingredients
1.5 cup cornmeal
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
2 eggs
2 cups milk
3 tablespoons sugar or honey
4 tablespoons of melted butter slightly cooled
2-3 tsp of Roland foods pickled jalapeño diced
For serving:
Fried egg, salsa or chili, and black beans
Method
In a large bowl, mix flour, cornmeal, baking powder, sugar, and salt.
In another bowl, mix milk, melted butter, and eggs. Mix wet ingredients into dry ingredients. Add in the pickled jalapenos and gently fold into the batter.
Preheat the waffle iron to the desired setting.
Grease the waffle iron with olive oil cooking spray and add about 3/4 cup of batter into the waffle iron.
Cook according to waffle iron instructions and remove when golden brown.
Serve warm topped with fried egg, black beans, and salsa or chili!
