Ingredients
For the Chocolate Cake:
1 and 1/4 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1 1/2 cup granulated sugar
1 tsp espresso powder
1/4 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon salt
2 large eggs, at room temperature
1/2 cup olive oil
3/4 cup Lifeway plain kefir
2 teaspoons vanilla extract
1/2 cup hot water
Coconut pecan Frosting:
2 large egg yolks
1/2 cup evaporated milk
1 1/2 cups dark brown sugar
4 tbsp of unsalted butter
1 teaspoon vanilla
1/4 teaspoon kosher salt
1 cups sweetened, shredded coconut
1 cups chopped pecans
Method
Cake
- Preheat oven to 350 degrees. Spray a 9″ cake pan with non-stick baking spray and line it with parchment paper and set aside.
- In a large bowl combine the flour, cocoa powder, espresso powder, sugars, baking soda, baking powder, and salt.
- In a separate bowl, whisk together the eggs, oil, kefir, and vanilla.
- Add the wet ingredients to the dry ingredients in thirds, stirring gently with a rubber spatula until just combined.Add in the hot water and stir until evenly incorporated.
- Pour batter into prepared pan and place in the oven. Bake for 45 to 50 minutes, or until a toothpick inserted in the center of the cake comes out clean.
- Place the cake pan on a cooling rack and cool for 30 minutes before removing it from the pan and cooling completely.
Frosting
In a saucepan, whisk together egg yolks, evaporated milk, and brown sugar. Add butter and warm over medium-high heat while stirring constantly until the mixture thickens for about 10 minutes. Remove from heat and stir in vanilla and salt followed by coconut and pecans.Let cool. Slather on the chocolate cake and top with additional pecans if needed.
