
My kids love pancakes for breakfast. Lately, I’ve been making pancakes with @lifewaykefir which is a tart and tangy cultured dairy drink packed with protein, calcium, and 12 live and active probiotic cultures. Ingredients
2.5 cups all-purpose flour
1/2 teaspoons baking soda
2 tsp baking powder
2 tsp vanilla extract
1/2 teaspoon salt
3 eggs
2 cups lifeway organic plain unsweetened kefir
3 tablespoons sugar
For serving:
Maple syrup and fruits.
Method
Combine the flour, sugar (, baking powder, baking soda, baking powder, and salt in a large-sized bowl. In another bowl whisk the kefir, vanilla, and eggs
Add the wet to the dry ingredients and mix until smooth (there may be a couple of lumps but that’s okay).
Set the batter aside and allow to rest while heating your pan or griddle.
Heat a nonstick pan or griddle over low-medium heat and wipe over with a little butter to lightly grease the pan. Pour ¼ cup of batter onto the pan and spread out gently into a round shape with the back of your ladle or measuring cup. When the bubbles begin to appear on the surface, flip with a spatula and cook until golden. Repeat with the remaining batter.
Serve with honey, maple syrup, or fruit!
