Matcha White Chocolate Layer Cake – Decadent white chocolate layer cake with matcha white chocolate frosting! A delicious combination of @suncorefoods Matcha and white chocolate in every bite. In this cake, the white chocolate is incorporated into both the cake and the frosting, that makes it too delicious to stop with a slice!
Make sure to use very good quality matcha and white chocolate! It really does matter! And @suncore foods matcha does the job!
Ingredients:
Cake
Cake flour- 3 cups
Granulated sugar- 1.5 cups
Baking powder – 3 tsp
Good quality White chocolate chips- 1 cup
Vanilla extract –3 tsp
Suncore foods rose Salt – 1 tsp
Large Eggs- 4 ( room temperature)
Olive oil/ Vegetable oil – 3/4 cup
Whole milk – 1.5 cups ( room temperature)
Buttercream:
Unsalted butter- 3 sticks ( softened to room temperature)
Confectioners sugar- 2 cups
Heavy cream- 2 tbsp
Good quality white chocolate bar – 4 oz bar
Salt- a generous pinch
Suncore foods matcha powder – 2 tsp
Method:
Preheat oven to 350f. Line and Butter 3 6” cake pans.
Melt chocolate chips and milk together in microwave or stove stop (recommended) stirring continuously till the chocolate melts. Set aside to cool completely.
Mix all the dry ingredients ( flour,baking powder,and salt )
Beat the oil and sugar for a min. Then add in one egg at a time and beat until it’s light and fluffy for 3 mins. Add in the vanilla extract and beat till it’s well incorporated. Add the dry ingredients alternating with the milk and chocolate mixture and beat well on low till it’s all mixed.
Divide the batter into the prepared pan and bake for 20-30 mins till done or when a toothpick inserted comes out clean.
Once the cake is done, let it rest in the pan for 5 mins and then invert it onto the wire rack to cool off completely.
For the matcha white chocolate fudge frosting , melt the chocolate and set aside to cool at room temperature. Beat the butter for 2 mins. Then add the powdered sugar, salt , vanilla , matcha powder and beat for 1 to 2 mins until smooth. Then add the melted cooled chocolate beat well till the color is well incorporated. Add in the heavy cream and beat until we’ll mixed. Frost as desired.
