Looks perfect right?? Even the fussiest kids will enjoy these! These muffins are not too sweet and they make a perfect and a healthy breakfast snack or even dessert!

Overripe bananas give an excellent taste and texture for these muffins/ bread! I highly recommend using overripe bananas. In case, you don’t have overripe ones here’s a good tip on how to make them ripe instantly! Just place the raw or not too ripe bananas on the baking sheet and pop them into a preheated oven at 350°F for about 5 to 7 minutes till they turn black! Viola! And you can use them in any recipe that calls for the overripe bananas!

You could also use whole wheat flour in place of all-purpose flour. Ive tried it and it works perfectly! To sweeten it a little bit along with bananas , I’ve used brown sugar. You can also use white sugar I case you run out of brown sugar. And to flavor it up I’ve added cardamom powder and vanilla extract. If you have walnuts, just mix in 3/4th of a cup to the batter. Its even more delicious! A perfect treat!

Here’s you go with the recipe!
Ingredients:
- 2 cup all purpose flour / whole wheat flour
- 1/2 tsp salt
- 1 tsp cardamom powder
- 2 cups mashed overripe bananas
- 1 tsp baking powder
- 1 tsp baking soda
- 1 cup dark brown sugar (if you prefer little bit less sweeter use 3/4 cup of dark brown sugar)
- 1/2 cup good quality olive oil
- 2 large eggs (room temp)
- 1 tsp pure vanilla extract
- 3/4 cup walnuts(optional)
- 1 cup chopped California Dates
Instructions:
- Preheat oven to 350°F and fill the muffin pan with liners or grease and line a loaf pan.
- In a large mixing bowl whisk the ingredients (olive oil, mashed banana, eggs, vanilla extract
- Mix the flour, baking soda, baking powder, salt and cardamom powder to the banana mixture and mix well.
- Spoon the batter into the muffin tins to fill them about halfway.
- Bake until a toothpick stuck in the muffins comes out clean, 18 to 20 minutes.
- Let cool for a few minutes before turning the muffins out. Serve warm or at room temperature.
