Ingredients:
- 11/4 cups all-purpose flour
- 2/3 cup almond flour
- 11/4 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup Lifeway Organic Plain Whole Milk Grass fed Kefir
- 3/4 cup olive oil
- 3 large eggs
- Zest of 2 oranges
- 1/2 cup fresh orange juice
- 2 teaspoon vanilla extract
Instructions:
- Preheat your oven to 350°F. Grease and flour a 9-inch round cake pan.
- In a medium bowl, whisk together the flour, almond flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, whisk together sugar, kefir, olive oil, eggs, orange zest, orange juice, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to over-mix.
- Pour the batter into the prepared cake pan and smooth the top. Bake in the preheated oven for 35-45 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
