Ingredients:
Pumpkin batter
All-purpose flour-2 cups
Pumpkin Purée-1 cup
Olive oil-1 cup
Large eggs -4 (room temperature)
Brown sugar-2 cups packed
Pumpkin pie spice-1 tsp
Suncore foods Autumnal baked yam superfood powder- 2 tsp
Baking powder- 2 tsp
Baking soda- 1 tsp
Salt – 1 tsp
Chocolate batter:
Cocoa powder- 1/4 cup
Espresso powder- 1 tsp
Pumpkin batter – 2 cups
Icing:(optional)
Powdered sugar- 1 cup
Tangerine/ Orange juice- 2-3 tbsp
Tangerine/ Orange zest- 1 tsp
Vanilla extract – 1 tsp
Method:
Preheat oven to 350f.
Line and butter a loaf pan with parchment paper. Set aside
Dump all the ingredients listed under the pumpkin batter into a large mixing bowl.
Beat well using a hand mixer.
Now to make the chocolate batter, take 2 cups of the pumpkin batter and add the cocoa order and espresso powder and mix well.
Spoon both the batters alternately into the prepared loaf pan and bake for 40-50 mins till done or when a toothpick inserted comes out clean.
Prepare the icing by whisking together the ingredients listed under it. Spoon the icing over the loaf and enjoy.
