Ingredients
- 12 large eggs
- 4 tbsp mayonnaise
- 2 tbsp sour cream
- 1/4 tsp salt
- 1 tbsp Roland foods truffle oil
- kosher salt and freshly ground black pepper
Method
- Place eggs in a heavy-bottomed pot and cover with cool water by 1 to 2 inches. Bring it to a rolling boil. Remove from heat and let stand, covered for 12 minutes. Transfer eggs to a bowl of ice water and let stand for 10 minutes before peeling under cool running water. Slice eggs in half lengthwise.
- Gently scoop egg yolks into a bowl. Using a hand mixer beat yolks and combine with mayonnaise, and sour cream until smooth and fluffy. Stir in truffle oil. Season with salt and pepper.
- Using a piping bag fitted with a large star or plain tip, fill each egg white half with some of the egg yolk mixtures. Store in refrigerator until served.
