Ingredients:
- 3 cups cake flour
- 1 1/2 cup sugar
- 21/2 tsp baking powder
- 1/2 tsp baking soda
- 3/4 teaspoon kosher salt
- 1 cup butter softened
- 1/2 cup vegetable oil
- 3 eggs
- 1 cup Lifeway vanilla kefir
- 1 teaspoon almond extract
Cream cheese Frosting
- 3 cups powdered sugar
- 1/2 cup butter (room temperature)
- 1 8oz cream cheese at room temperature
- 1 teaspoon vanilla extract
- pinch (less than 1/16 teaspoon) kosher salt
Filling
- 1/3 cup strawberry jam
- 1.5 cups sweetened shredded coconut for enrobing
Steps:
- To make the cake: Preheat the oven to 350 and prepare three 8” cake pans by greasing (with butter, shortening, or cooking spray) and flouring.
- In a large bowl, mix together all dry cake ingredients (flour, sugar, baking powder, and salt). Using a stand mixer beat the butter for 2-3 mins until pale. Add the sugar and beat for 2 mins until we’ll combined. Add egg one at a time and beat until we’ll combined. Mix in the vanilla extract and oil and beat. Add the dry ingredients in two batches alternating with the kefir until the batter is just combined. Divide the batter between pans and place the pan in the middle rack in the oven and bake for 20-30 mins or until done. Once the cake is done set aside to cool completely.
- Combine the remaining frosting ingredients together in a large mixing bowl. Beat on high for 4-5 minutes until the mixture is smooth and fluffy. If the mixture is too stiff, you can add an additional tablespoon of milk. If it is too loose, you can add more powdered sugar. Set aside
- To assemble: Your cakes must be completely cool. Place one cake, top side down on a cake holder or large plate. Evenly spread the strawberry jam over the top of the first cake. Keep a small clean buffer around the outer edge of the cake top so that when you frost the sides of the assembled cake you don’t get jam mixed in with your frosting. Repeat this for remaining layers. Carefully spread the frosting over the top and sides of the whole cake. Enrobe the cake with with your sweetened coconut flakes and serve.
